Update

I am getting really bad at keeping up with this. Nothing has been going on for the past few weeks. But about 3 weeks ago we went to GA to visit with Mike’s family. We had a great time and ate some really yummy food! We are actually about to head back there in a couple of days for the holiday then we’re headed to my home(the greatest state in the union, South Carolina) for Sallee Anne’s wedding! I am so excited to see everyone and visit home! I know we are going to have a blast!! Of course pics and details to follow our 9 day long adventure 🙂

As far as music goes right now I am listening to a bevy of new songs. My two favs are Adele(the obsession continues) with her track I’ll Be Waiting It is a great song with an infectious beat and it makes me wanna sing at the top of my lungs! The other is from The Band Perry and their song You Lie which is just as unique as If I Die Young. When I first heard You Lie I did not wanna like it but I couldn’t help it! I hope you enjoy ❤

Birthday Fun!

Wow, I need to keep up with this better! I wanted to do something special for Mike’s birthday this year(making up for that whole Biergarten debacle two years ago) so once a friend and I realized that her boyfriend and Mike’s birthdays were in the same week we decided to throw them a little surprise get together! We had been planning it since March. It was really hard to keep the secret and also cover our tracks. All of this gave me much stress however they were both surprised so it was worth it! The party was at the Noxubee Wildlife Refuge on a Sunday evening and the weather could not have been more perfect. We had a pretty good turn out and it ended up being a lot of fun.

Yummy

It has been a few days since I have blogged so I figured I would catch up. We went to Mike’s parents in Georgia for Easter weekend and we were going nonstop the whole time we were there. I had a fabulous time(as I always do, the Arnold’s never disappoint). We ate some yummy(terrible for me) food but since we jogged while we were there I think it counteracted it(thank goodness)! While jogging on the trails in Peachtree City we realized that our bodies are not really conditioned for any elevation changes haha. We figured that out the hard way as we ran those hills up and down.

The Egg Game!!

I am always thinking about what the next meal is. Its a blessing and a curse. So the other day when Mike suggested a recipe that I had made before it made me happy that someone had taken that responsibility out of my hands. The recipe was one that I found when we first started eating healthier. I liked it because it sounded delicious and easy and it turned out to be both(If Mike requests something then you know he liked it). So I made  it last night and it didn’t disappoint and I highly recommend it. I promise it doesn’t taste low cal at all. The only thing you taste is yummy cheesy goodness 🙂 I served mine with some brown rice that I mixed salsa in for extra flavor. I hope you enjoy the Mexican Chicken Casserole as much as we did.
